A delicious and unique walking taco made with plantain chips, shredded king oyster mushrooms, and a flavorful shishito salsa. This recipe also includes a creamy avocado sauce that ties everything together beautifully. Perfect for a quick meal or snack!

1: Preheat oven to 450ºF. 2: Run fork along stem of mushroom to shred, then transfer to a hot skillet lightly oiled. 3: Add spices and cook for 8-10 minutes until most moisture is expelled. 4: Add pepper sauce and tomato paste, mix in, and finish in the oven for about 10 minutes until slightly crisp and cooked through. 5: For shishito salsa, blister peppers in a skillet, then chop with tomato, onion, garlic, and rest of spices and add to a bowl. Mix to combine and set aside. 6: For avocado sauce, add all ingredients to a blender and process until smooth. 7: Cut open bag of chips, assemble the tacos, and enjoy.
