A super flavorful and satisfying peanut curry pasta dish made creamy with @skippybrand peanut butter and coconut milk, combined with fresh vegetables and herbs for added taste.

1: Boil water and add pasta. 2: Meanwhile, sauté peppers, garlic, ginger, and onion until tender. 3: Make a well in the middle of the pan, add in coconut oil and spices, stir to form a paste and incorporate veggies. 4: Once incorporated, add in coconut milk and peanut butter, stir to combine and let simmer for 5 mins. 5: Strain pasta and add to sauce, add in sliced basil and fold into the noodles with the sauce. 6: Garnish with more fresh basil, red pepper flakes, and a squeeze of lime (optional). 7: Serve and enjoy!
