1: In a large mixing bowl, add the plant milk, Manuka honey, melted vegan butter, sugar, salt, and active yeast. Whisk to combine and let the yeast activate for at least 5 minutes. 2: Add in flour and mix until a workable dough forms. 3: Transfer the dough to a lightly oiled bowl and let it proof for 1-2 hours. 4: Once proofed, transfer the dough to a lightly oiled work surface and spread it out into a large rectangle. 5: Cut out desired amounts of squares, roll them into thin logs, coat one side with vegan butter and cinnamon sugar, roll them up, and set aside on a baking tray to rest for another 30 minutes. 6: Bake at 400°F for 15 minutes. 7: Meanwhile, prepare the icing by adding all ingredients to a bowl and whisking to the desired consistency. 8: Top buns with icing and enjoy.
