1: Freeze cabbage (or leaves) overnight. 2: Let thaw in warm water until soft and pliable. Set aside. 3: Toss mushroom, onion, and pepper into a food processor and pulse until uniform. 4: Sauté over medium heat for 5 minutes or until soft. 5: Add in crumbled pumpkin seed tofu and seasonings. Turn off heat and set aside. 6: Assemble rolls with thawed leaves and quickly sear for 2 minutes on each side. 7: Combine sauce ingredients in a small bowl and enjoy.
