Homemade Cinnamon Toast Crunch

A vegan version of the beloved Cinnamon Toast Crunch cereal that is both healthier and delicious, recreating childhood flavors. This homemade cereal comes together in about 35-45 minutes and is a rewarding project for those who love to experiment in the kitchen.
1: Add flour, sugar and salt to food processor, pulse to combine. 2: Once combined, add vegan butter or coconut oil and pulse until mixture is crumbly and resembles wet sand. 3: Stream in the ice water while blending until rough dough forms. 4: Turn out onto floured work surface, lightly knead and shape into a ball. 5: Cut in half with bench scraper or sharp blade. 6: Roll dough out very thin. 7: Spread melted vegan butter on rolled out dough. 8: Sprinkle with cinnamon sugar and coat evenly. 9: Flip the dough and repeat on the other side and with the remaining dough. 10: Use a pizza cutter to trim excess dough and cut mini squares about ¾ of an inch all around. 11: Lay cut pieces on a lined baking tray and bake at 350ºF for 25 minutes. 12: Let cool for about 10-15 minutes and enjoy.
