These Loaded Jackfruit Nachos are a tasty vegan twist on a classic snack. Topped with seasoned jackfruit, creamy 'cheese', fresh guacamole, and pico de gallo, these nachos are bursting with flavor and are perfect for gatherings.

1: Combine all jackfruit ingredients and set aside to marinate for at least 30 minutes. 2: Sauté the jackfruit in a pan on medium-high heat until crispy. 3: For the 'cheese', prep garlic and onion. 4: Put plant milk, cashews, and nutritional yeast in a blender, process until combined, and set aside. 5: Sweat garlic and onion in a separate pan. 6: Strain off cheese sauce mixture into the pan and add the coconut milk. 7: Season with salt, pepper, and a little turmeric (for color), and simmer until thick enough to coat the back of a spoon. 8: For pico and guac, chop all ingredients and combine, seasoning to taste. 9: Assemble nachos and serve.
