1: Preheat oven to 350ºF. 2: Mix flax seeds and water; set aside. 3: For crust, add plantain chips to a food processor and blend until fine. 4: Add chickpea flour and coconut sugar to the processor and blend to combine. 5: Add vegan butter and pulse until rough clumps form. 6: Transfer mixture to a pie dish and press into shape to form the crust. 7: Bake crust for 10 minutes. 8: Meanwhile, peel and chop plantains and mash them fully. 9: In a blender, add mashed plantains and all other filling ingredients; process until smooth. 10: Remove crust from oven, pour filling into the crust (it's okay if there's extra). 11: Bake again for 50 minutes to 1 hour. 12: Let set at room temperature for at least one hour. 13: Serve and enjoy.
