A delicious vegan lentil loaf made with cooked lentils, vegetables, and flavorful herbs, topped with a savory glaze. Perfect for holiday gatherings!

1: In a small bowl, add the ground flax seed and water, stir to combine and set aside. 2: Soak walnuts in boiling water for at least 20 minutes, then set aside. 3: Add onion, pepper, and mushrooms to food processor and pulse until uniform in size. 4: Sauté over medium-high heat until onions and peppers are translucent and mushrooms have released moisture. 5: Add all seasonings, lentils, soaked and chopped walnuts, breadcrumbs, pumpkin seed tofu, and flax seed mix. Cook for about 3 minutes. 6: Transfer to a parchment-lined loaf pan and pack all of the meatloaf mix into the pan tightly. 7: Mix all ingredients together for the glaze and layer on top a few times for a nice coating. 8: Bake at 350°F for 30 minutes. 9: Let cool for about 10 minutes and enjoy.
