1: In a small bowl, add in the ground flax seed and water, stir to combine and set aside. 2: Chop the onion, pepper and mushrooms. 3: Sauté over medium-high heat until onions and peppers are translucent and mushrooms have released moisture. 4: Add in all seasonings and stir to combine. 5: Add in the cooked lentils, breadcrumbs, and flax seed mix. 6: Combine everything in the pan then transfer to a parchment lined loaf pan. 7: Pack all of the meatloaf mix into the pan tightly. 8: Mix all ingredients together for the glaze and layer on top a few times to get a nice coating. 9: Bake covered with aluminum foil at 350ºF for 30 minutes. 10: Let cool for about 10 minutes and enjoy.
