This gnocchi recipe features minimal ingredients and is a fun weekend project. Perfectly cooked potatoes are mixed with flour and olive oil to form a smooth dough, then shaped and boiled before being fried until crispy.
1: Peel your potatoes and drop into a bowl with ice cold water to prevent browning and remove starch. 2: Bring a pot of water to boil. 3: Once all potatoes are peeled, boil potatoes for 25-30 mins until fork tender. 4: Strain potatoes and drop into ice water. 5: Grate the boiled potatoes into a large bowl. 6: Once grated, turn out onto a work surface and add the flour and oil in a little well in the middle of the potatoes. 7: Slowly mix and form the dough until you have a smooth ball. 8: Cut the dough into 4 even pieces. 9: Bring a pot of water to a boil. 10: Roll out each piece to a long, thin log. 11: Use a bench scraper or knife to cut your gnocchi pieces. 12: Once all cut, drop a few at a time into the water until they float. 13: Transfer into a skillet and fry them in olive oil until crispy, and season with salt, pepper, garlic, red pepper, rosemary, and parsley. 14: Serve and enjoy.
