This recipe for Red Lentil Tofu combines red lentils and various seasonings to create a delicious plant-based tofu alternative. 1: Add lentils, seasoning cube and boiling water to a blender and let soak for 15 mins. 2: Blend until smooth. 3: Transfer mixture to a wide pan and cook down on medium heat, stirring consistently until thickened. 4: Transfer to a heat-proof container and leave in fridge for at least 3 hours to overnight to set. 5: Once set, chop tofu into cubes and coat with oil and seasonings of choice mixed with arrowroot starch. 6: Air fry at 400ºF for 20 mins or until desired crispness is reached. 7: For the sauce, combine all ingredients and stir to mix. 8: Pour sauce over air-fried tofu and enjoy.
