A delicious and easy-to-make Beet Carpaccio dish featuring tender slices of beets served with a creamy cashew sauce, perfect for parties and dinners.

1: Steam or boil your beets for around 30-40 minutes or until fork tender. 2: Let cool slightly and then peel the skin off. 3: Cut off the root ends and slice the rest of the beet thinly. 4: Meanwhile, add in all cashew sauce ingredients and blend until smooth and creamy. 5: Plate the beet slices, add a dollop of the cashew sauce, garnish with microgreens and hemp seeds, along with a drizzle of olive oil. 6: Serve and enjoy.
