1: Steam the frozen artichokes for 5 minutes until thawed completely. Remove from pan and set aside. 2: Prepare the frying batter by combining the flour, sparkling water, and seasonings. Whisk until fully incorporated. 3: Dip the artichoke in the batter to fully coat, let excess drip off and put into oil to fry until golden and crisp. 4: Season with salt immediately upon taking them out of the oil. Repeat with the rest of the pieces. 5: For the sauce, put all ingredients in a food processor or blender and blend on high until smooth. Taste for seasoning, plate up and enjoy!
