1: Drain and rinse canned jackfruit, transfer to a bowl with spices and oil, combine fully and set aside to let marinate for at least 30 mins. 2: Meanwhile, make the BBQ sauce by combining all ingredients in a saucepan and simmering together for 10 to 15 mins. Set aside. 3: For the plantain, peel and cut into about 1 inch thick chunks. 4: Fry plantain once until golden then remove from oil, smash flat with a spatula then refry until golden brown. Set aside on paper towel lined tray. 5: For the jackfruit, sear off in a skillet over medium-high heat until slightly charred and crisp, about 8 mins. 6: Turn off the heat and pour over the BBQ sauce to coat. 7: Slice the cabbage and scallion thin and add slaw ingredients to a bowl. 8: Assemble bites and enjoy.
