Delicious vegan empanadas filled with a savory mixture of plant-based meat, olives, and sautéed vegetables, perfect for a snack or meal.

1: Preheat oven to 360° F. 2: Chop the onions and peppers. 3: Sauté onions and peppers in a pan with oil until soft and slightly translucent. 4: Add the plant-based meat substitute and seasonings, mix to combine. 5: Turn off heat, add olives and set aside to cool completely. 6: Once cooled, spoon about 2 tablespoons of filling into the dough. 7: Seal the empanadas with your best 'repulgue'. 8: Fold and pinch the edges to seal completely. 9: Repeat until all filling and dough is used. 10: Place empanadas on a tray with a little oil a few inches apart. 11: Bake at 360° F for 20 minutes until dough is puffed and slightly browned. 12: Remove from oven, let cool and enjoy.
