1: Mix the ground flax seed and water and set aside. 2: Mix the apple cider vinegar and hemp milk and set aside for at least 5-10 minutes. 3: Combine the wet ingredients in a mixing bowl along with melted vegan butter. 4: In a separate large bowl, combine all dry ingredients and whisk to combine. 5: Mix wet with dry ingredients, folding gently to avoid overmixing; some lumps are okay. 6: Optionally, let the batter sit for a few minutes to activate baking powder for fluffier pancakes. 7: Lightly oil a cake or cookie mold and place it in the pan with enough batter to fill the mold. 8: Cook for about 3-4 minutes on one side, covered. 9: Flip and cook another 2-3 minutes. Repeat with the desired amount of batter. 10: Serve with desired toppings and enjoy.
