1: Slice all peppers, mushroom, and onion. 2: Add mushroom to a hot skillet and cook for about 5 minutes or until moisture starts to release. 3: Add peppers and onions along with the spices and cook until all are soft. 4: Add on your vegan cheese of choice, cover to steam and melt, or place under broiler until melted. 5: Add to your bread of choice with a layer of vegan mayo and optionally some chives to garnish.
