Delicious vegan tacos made with roasted king oyster mushrooms marinated with spices, served with ackee pico and lime. A flavorful and satisfying meal.

1: Preheat oven to 400°F. 2: Slice mushrooms and set aside. 3: Make marinade by mixing all spices and oil together. 4: Pour marinade over the mushrooms and mix until fully coated. 5: Slice onion and garlic and transfer them to a baking dish with salt, pepper, and some oil to coat. 6: Add mushrooms to the dish and cover, then roast for 20 mins. 7: Roast for another 10 mins uncovered. 8: Meanwhile, chop all pico ingredients and mix to combine. 9: Once mushrooms and onions are roasted, pull the mushrooms with 2 forks. 10: Assemble tacos and enjoy.
