1: Chop onion, peppers, and garlic. Saute in a saucepan until soft. 2: Add curry powder, chickpeas, and coconut milk. Mix and let simmer for 10-15 mins uncovered. 3: Marinate jackfruit with seasonings for at least 30 mins. 4: Cook marinated jackfruit over medium-high heat for 10-15 mins until slightly charred. 5: Chop the head of cabbage and transfer to a pot with vegetable stock cube, water, and herbs. Braise for 10-15 mins. 6: For the cucumber salad, cut cucumber lengthwise, smash cut side down, chop into chunks, and mix with all ingredients in a bowl. 7: Air fry sweet potato slices at 400°F for 15 mins. 8: Assemble bowl and enjoy.
