1: Preheat oven to 400ºF. 2: Chop the peppers, tomatoes, and onions into large pieces and place on a parchment lined baking tray. 3: Add the cloves of garlic to the tray and drizzle with olive oil along with salt and pepper. 4: Roast veggies for 35-40 mins. 5: Let cool slightly then transfer to a blender along with the bunch of cilantro and lime juice until desired consistency is reached and season to taste. 6: For tortilla chips, cut tortillas into quarters and fry until golden and crispy, season with salt right out of the oil. 7: Assemble plate and enjoy.
