1: To a large mixing bowl, add the flour and salt. 2: Make a well in the middle of the flour and add the warm water and olive oil. 3: Whisk lightly until a slurry forms and slowly incorporate the rest of the flour as the dough forms. 4: Once a shaggy dough is formed, turn it out onto a work surface and knead until the dough becomes smooth. 5: Form a ball and cover with a damp towel for 15 minutes. 6: After the 15-minute rest, roll out the dough to your desired thickness. 7: Roll the dough into a log, cut your pasta shape, unravel and set noodles aside until ready to cook. 8: To a pot of boiling salted water, add the pasta and cook for 1-2 minutes maximum. 9: Strain and serve with sauce and toppings of choice.
