1: Boil jackfruit for 10 mins to remove brine flavor. 2: Press jackfruit to remove excess liquid. 3: Sauté jackfruit with chopped peppers, onion, and mushrooms. 4: Add tomato sauce and set aside on low heat. 5: Peel and slice plantains into semi-thick strips. 6: Fry plantains on both sides until golden and set aside. 7: Grate vegan cheese and prepare cheese sauce. 8: Assemble lasagna with plantain, sauce and veggies, cheese sauce and repeat layers. 9: Top with grated cheese and bake at 355°F for 25 mins. 10: Let cool and serve.
