A Caribbean classic turned vegan with young jackfruit, red onion, bell peppers, garlic, and various spices. This simple and delicious meal is versatile and can be served with rice.

1: In a food processor, blend the garlic, scallion, green bell pepper, and white onion. 2: Pour over the drained and rinsed jackfruit and let marinate for at least 20 mins. 3: In a large pot, heat a little oil on medium and add the marinated jackfruit to sear for 8-10 mins. 4: Meanwhile, chop the red onion and red bell pepper. 5: Once seared, add the chopped pepper and onion to the pot. 6: Push the mixture to the side of the pan and add the brown sugar, allowing it to melt down until it just starts to smoke. 7: Sauté everything together. 8: Add the salt, pepper, thyme, allspice, and browning sauce. Season to taste. 9: Add enough veggie stock to cover the jackfruit and simmer for 5-10 mins. 10: Serve over rice and enjoy.
