A traditional Jamaican dish made from cassava, Jamaican Bammy is prepared by processing grated cassava into a flour texture, which is then shaped and cooked until crispy. The dish is finished by soaking in coconut milk for added flavor. Perfect as a side dish or snack.

1: Peel and chop your cassava root, then place in a bowl of water to rid of excess starch. 2: Process the cassava on your finest grater setting until it forms a paste-like consistency. 3: In a clean kitchen towel or cheesecloth, add the grated cassava and squeeze out as much liquid as possible. 4: Transfer to a baking tray or bowl and rub the squeezed-out cassava between your hands to form a fine flour. 5: Sprinkle a little salt into this flour and mix together. 6: Over medium-low heat with a ring mold or any mold, add in a few spoonfuls of the cassava mix to fill the mold. 7: Let sit for about 5 minutes or until the bottom holds together, then pack the mix down in the mold and flip to cook for another 5 minutes until slightly colored. 8: Remove from the pan, then transfer to a dish with cooked-off Sammy and soak in coconut milk for about 5-8 minutes. 9: Transfer out, pat dry, then shallow fry over medium heat until crisp and golden on each side. 10: Serve and enjoy.
