A delicious sandwich featuring Lion's Mane mushrooms prepared as a 'steak' and complemented with a flavorful garlic mayo and chimichurri sauce, all served on a choice of bread.

1: Sear and press lion's mane mushrooms in a pan over medium-high heat until they develop color on both sides. 2: Set the mushrooms aside. 3: In a bowl, combine boiling water, avocado oil, coconut aminos (or soy sauce), beet powder, thyme, granulated garlic, granulated onion, and black pepper to make the marinade. Whisk to combine. 4: Pour the marinade over the mushrooms in a plastic bag and set aside for at least 15 minutes. 5: Meanwhile, combine all ingredients for chimichurri and garlic mayo in separate bowls. 6: Once marinated, sear the mushrooms again to cook them through and baste with vegan butter, fresh thyme, and garlic cloves. 7: Remove from the pan once nicely cooked through, slice, assemble the sandwich, and enjoy.
