1: Preheat oven to 400º F. 2: Boil mini potatoes until fork tender. 3: Transfer potatoes to a parchment-lined baking sheet and smash with a large glass or flat surface. 4: Drizzle potatoes with olive oil and season with salt, pepper, and garlic powder. 5: Roast potatoes in the oven for 25-30 minutes until golden and crispy. 6: In an oiled cast iron skillet, place whole lion's mane mushrooms. 7: Let sit in the pan for 2 minutes, then lay another cast iron skillet on top and press together to help the mushrooms expel moisture. 8: Let cook on one side for about 6-7 minutes until seared, then flip. 9: Season mushrooms with salt and pepper, press again until the desired size is reached. 10: Place mushrooms in the 400º F oven for about 10 minutes. 11: Remove from oven, add vegan butter and fresh herbs to the pan, and baste the mushrooms. 12: Steam or sauté asparagus with seasonings of choice and serve all together.
