1: Combine ground flax, water, sriracha, mustard, and coconut aminos in a small bowl, mix and set aside. 2: Combine all dry ingredients (chickpea flour, white pepper, dried thyme, paprika, garlic powder) and whisk, then set aside. 3: Separate mushrooms and coat in the wet batter, then in the dry batter twice until completely coated. 4: Fry coated mushrooms in avocado oil until golden and crispy, then set aside. 5: Slice jalapeño and scallion, and chop garlic. 6: Sauté jalapeño, scallion, and garlic over medium heat until fragrant. 7: Add fried mushrooms to the sautéed mix, add salt and pepper to taste, and mix to combine. 8: Turn off the heat and serve, enjoying the dish.
