1: Drain jackfruit from cans. 2: Pour out veggie stock into a bowl and let jackfruit marinate for about 30 mins. 3: Once marinated, drain and lay out jackfruit on a lined baking tray. 4: Add seasonings and a little bit of oil, mix to coat evenly, and bake for 15-20 mins until dried but not crispy. 5: Remove from oven and let cool. 6: Heat oil for frying in a large pan. 7: For the wet batter, mix flax seeds, water, hot sauce, and mustard and set aside. 8: In a separate bowl, add flour, salt, pepper, and parsley. 9: Dredge each piece of jackfruit in the wet batter and then the flour mixture twice. 10: Fry until golden and crispy, then let cool on a paper towel lined plate, serve, and enjoy!
