1: Soak walnuts in hot water for 15-20 mins. Drain and rinse. 2: Load walnuts, mushrooms, onion, pepper and pumpkin seeds into food processor and pulse until combined. 3: Transfer blended nuts to a hot pan along with spices. Cook for about 7 minutes or until mixture is browned and golden. Set aside to cool slightly. 4: For burger sauce, add all ingredients to a small bowl and mix to combine. 5: Shallow fry one taco sized tortilla until golden brown, set aside. 6: Assemble crunchwrap with layer of walnut meat, wrap sauce, tomato, pickle, fried taco tortilla, sauce, shredded onion and lettuce. 7: Top with unfried taco tortilla and wrap fully, seal on a hot skillet and serve.
