1: Peel and slice your apples. 2: In a large skillet or pot, add apples, sugars, syrup, cinnamon, nutmeg, salt, vanilla, lemon juice, and zest. 3: Cook on medium heat until apples are slightly tender. 4: Add in arrowroot powder, stir to combine, then remove from pan into another dish. 5: For the crust, add flour, salt, sugar, and vegan butter or coconut oil to a food processor. 6: Pulse until butter is incorporated and holds shape when pressed. 7: Blend on high speed while streaming in the ice water slowly. 8: Once dough has come together, turn out onto a work surface and form into a large ball. 9: Divide dough into 2 equal pieces and set one aside. 10: Roll one piece out to cover your pie pan and shape accordingly, trimming excess. 11: Dock the bottom of the crust with a fork to prevent air bubbles. 12: Add filling and spread out evenly. 13: Roll out the second piece of dough for the top. 14: Shape as desired or place as a sheet on top over filling. 15: Bake at 350°F for 50-60 minutes.
