These plantain fritters are easy and delicious, perfect for a sweet or savory option depending on the seasoning. Fry them up and enjoy with a spiced ginger sauce.

1: For the sauce, add all ingredients and blend until smooth. 2: For the fritters, in a mixing bowl add the chickpea flour, brown sugar, salt, baking powder, and cinnamon. Whisk to combine and set aside. 3: In a larger mixing bowl, peel the plantain and mash fully with a fork or potato masher. 4: Add in the water and vanilla, mix together. 5: Add in the dry ingredients and fold together with a spatula. 6: Heat oil on medium-high heat. 7: Scoop batter with a spoon and lay gently in the oil. 8: Cook for 2 minutes on each side or until golden and crisp. 9: Optionally top with powdered monkfruit sweetener and cinnamon or maple syrup and enjoy.
