This dish features large broccoli crowns roasted to perfection, served on a bed of smooth red pepper sauce, garnished with toasted pumpkin seeds and lemon zest. A healthy and delicious vegan meal.

1: Set oven to 400°F. 2: Cut broccoli into large wedges and lay on a baking tray. 3: Coat broccoli in oil, salt and pepper and roast for 30 minutes. 4: Meanwhile, add all red pepper sauce ingredients to a blender and blend until smooth. 5: Plate with a layer of red pepper sauce followed by the roasted broccoli. 6: Garnish with toasted pumpkin seeds, olive oil, and lemon zest. 7: Enjoy.
