A delicious vegan take on the classic Cubano sandwich using jackfruit as the main ingredient, marinated with citrus, garlic, and spices, then toasted to perfection.

1: Preheat oven to 400°F. 2: Blend the citrus juice + zest, garlic, oil and spices until smooth. 3: Pour over drained and rinsed jackfruit and coat fully. 4: Cover and let marinate for at least 30 mins. 5: Once marinated, pan fry until slightly browned then pour over remaining marinade. 6: Roast in the oven at 400°F for 7-10 mins until charred and crispy. 7: Slice pickles, toast bread and add a layer of mustard jackfruit then vegan cheese. 8: Brush bread with melted vegan butter and press in a pan to toast fully on both sides. 9: Slice and enjoy.
