Delicious walnut cheeseburger spring rolls made with rice paper sheets filled with a blend of walnuts, mushrooms, and spices, served with a creamy vegan burger sauce. Perfect as a snack or appetizer, yielding 10-12 rolls.

1: Soak walnuts in hot water for 15-20 minutes. Drain and rinse. 2: Load walnuts, mushrooms, and pumpkin seeds into food processor and pulse until combined. 3: Dice your onion and sauté until browned and slightly caramelized. 4: Transfer blended nuts to a hot pan along with spices and sautéed onions. 5: Cook for about 7 minutes or until mixture is browned and golden. Set aside to cool slightly. 6: For burger sauce, add all ingredients to a small bowl and mix to combine. 7: Dip rice paper sheets in water until malleable, lay on a flat surface. 8: Assemble rolls with a piece of plant based cheese and about 1/4 cup of walnut mixture. 9: Wrap and pan sear for about 2-3 minutes on each side or until crispy on all sides. 10: Serve and enjoy!
