1: Chop and peel all plantain. 2: Boil until fork tender. 3: Let plantain cool completely or shock in ice bath. 4: Transfer to a food processor with flour and process until roughly dough forms. 5: Knead to combine and set aside to rest for at least 15 mins. 6: Pinch out golf ball-sized pieces of dough and press flat with a pan or tortilla press. 7: Cook in a dry skillet until cooked through and brown on each side. 8: For lions mane, chop into thick chunks and sauté in a pan with seasoning, butter, and sauce. 9: Cook until caramelized and water content has expelled. 10: For salsa, chop all ingredients and mix with oil and spices. 11: Assemble the tacos and enjoy.
