A delicious vegan sandwich featuring seared lions mane mushrooms, chimichurri sauce, and crispy shallots, served on fresh bread and topped with arugula.

1: Sear and press the lions mane mushrooms in a pan over medium-high heat for about 3 minutes, lightly oiled. 2: Let it develop color on both sides and press to desired thickness, cook through and baste with vegan butter and fresh herbs. 3: Remove from heat and let rest on the side. 4: Chop and add all chimichurri ingredients in a bowl, mix and set aside. 5: Slice shallots thin, toss in seasoned flour mix and fry over medium heat for about 1-2 minutes until golden and crispy. 6: Assemble sandwich with seared mushrooms, chimichurri, crispy shallots, and arugula, and enjoy.
