1: Preheat the oven to 375 ºF. 2: For the crust, beat the vegan butter, granulated sugar, brown sugar, and vanilla in a stand mixer for 2 minutes until light and creamy. 3: Sift together the flour and salt. With the mixer on low, slowly add to the butter-sugar mixture until combined. 4: Scatter two-thirds of the dough into a baking pan, pressing lightly on the bottom and sides. Refrigerate for 20 minutes. 5: Bake the crust for 18 to 20 minutes until golden brown. Set aside to cool. 6: For the filling, combine the apples, pears, and lemon juice in a large bowl. 7: Add the granulated sugar, cinnamon, and nutmeg, then mix well. 8: Melt the butter in a large pot, add the apple and pear mixture, and simmer for 12 to 15 minutes until tender. 9: Spread the fruit mixture evenly over the crust, leaving a 1/2-inch border. 10: Crumble the remaining dough over the top of the apples and pears. 11: Bake for 25 to 30 minutes until the topping is browned. 12: Cool completely, cut, and serve.
