tbsp pepper

tbsp dried thyme

tbsp garlic powder

cup maple syrup

Instructions
1: Preheat oven to 400°F. 2: Peel and chop the Yukon gold potatoes and boil in salted water for 10-15 minutes or until fork tender. 3: Meanwhile, fill the bottom of your baking dish with avocado oil, about 1/4-1/2 inch high, and place in the preheated oven while potatoes boil. 4: Drain the potatoes, season with spice blend and toss in the cooking pot to fluff up the edges. 5: Transfer the potatoes to the baking dish with the heated oil and roast for about 1-1.5 hours, flipping every 20-25 minutes. 6: Once roasted and crispy, set aside on paper towel-lined tray. 7: Add infused butter ingredients to a small saucepan and let cook for about 5 minutes on medium-low heat, mixing to combine. 8: Toss the infused butter with the potatoes.
