What you need
tbsp olive oil

tsp dried thyme
pinch salt

tsp ginger powder

tsp garlic powder

tsp onion powder

cup bbq sauce

cup chickpea flour

tsp smoked paprika

tbsp red wine vinegar

pinch pepper

tsp mustard powder

tbsp scallion
Instructions
1: Chop and peel all plantain. 2: Boil until fork tender. 3: Let plantain cool completely or shock in ice bath. 4: Transfer to a food processor with flour and process until roughly dough forms. 5: Knead to combine and set aside to rest for at least 15 mins. 6: Pinch out golf ball-sized pieces of dough and press flat with a pan or tortilla press. 7: Cook in a dry skillet until cooked through and brown on each side. 8: For lions mane, chop into thick chunks and sauté in a pan with seasoning, butter, and sauce. 9: Cook until caramelized and water content has expelled. 10: For salsa, chop all ingredients and mix with oil and spices. 11: Assemble the tacos and enjoy.View original recipe
