What you need

tsp baking soda

tsp salt

tbsp coconut oil

tsp lemon juice

tsp baking powder

tbsp sugar

tsp vanilla extract

cup flour

tbsp cinnamon

cup soy milk
Instructions
1: Preheat oven to 375°F. 2: Combine lemon juice and plant milk and set aside to curdle. 3: In a bowl combine flour, baking powder, baking soda, cinnamon, and salt. Mix and set aside. 4: In another bowl combine sugar, oil, vanilla extract, and plant milk. Mix. 5: Combine wet and dry ingredients until just combined, don’t over mix; a few lumps are fine. 6: Fold in chopped apples. 7: Scoop the mixture into a muffin pan lined with baking cups or oiled. 8: Bake for 20-25 minutes. 9: (Optional) Brush tips with vegan butter and dust with cinnamon sugar.
