Baked Chard Wraps

What you need

tbsp tomato paste

cup brown rice
tsp dried oregano

tsp garlic powder

tsp dried thyme

tsp smoked paprika

clove garlic

tsp chipotle chili

tsp pepper

tsp onion powder

cup vegetable stock

tsp salt

bunch swiss chard

cup mushroom

can chickpea
Instructions
1: Preheat oven to 350ºF. 2: For filling, chop onion, peppers, and mushrooms and sauté until slightly soft. 3: Add chickpeas, seasonings, and rice. Stir to combine and set aside. 4: For sauce, dice onion and garlic. Add them to a saucepan with vegan butter and spices. 5: Add tomato paste and cook for about 2 minutes. 6: Deglaze with vegetable stock and let it simmer for about 10 minutes. 7: Cut the stems out of the chard leaves, fill with the mixture, roll, and set aside. 8: In a baking dish, add a layer of sauce followed by the wraps and another layer of sauce on top. 9: Optionally garnish with sliced jalapeño on top. 10: Bake for 20 minutes, serve and enjoy.View original recipe
