BBQ Jackfruit Plantain Bites

What you need

tsp salt

tsp cayenne

tsp onion powder

clove garlic

cup ketchup

tbsp avocado oil

tbsp water

tsp smoked paprika

tbsp coconut aminos

tbsp yellow mustard

tbsp red wine vinegar

tsp black pepper

tsp garlic powder

can jackfruit

tsp dried basil

tsp sesame seed

cup cabbage

cup maple syrup

tsp fine sea salt
Instructions
1: Drain and rinse canned jackfruit, transfer to a bowl with spices and oil, combine fully and set aside to let marinate for at least 30 mins. 2: Meanwhile, make the BBQ sauce by combining all ingredients in a saucepan and simmering together for 10 to 15 mins. Set aside. 3: For the plantain, peel and cut into about 1 inch thick chunks. 4: Fry plantain once until golden then remove from oil, smash flat with a spatula then refry until golden brown. Set aside on paper towel lined tray. 5: For the jackfruit, sear off in a skillet over medium-high heat until slightly charred and crisp, about 8 mins. 6: Turn off the heat and pour over the BBQ sauce to coat. 7: Slice the cabbage and scallion thin and add slaw ingredients to a bowl. 8: Assemble bites and enjoy.View original recipe
