A delicious BBQ pulled mushroom sandwich made from king oyster mushrooms, capturing the flavor and texture of traditional pulled meat, served with sweet potato fries.

What you need

cup bbq sauce

tsp smoked paprika

tsp salt

tsp pepper

tsp parsley
tbsp oil

tsp garlic powder

tsp onion powder
Instructions
1: Run fork along the stems of the mushrooms to shred finely. 2: Place shreds in a bowl and season to taste. 3: Add oil and mix until shreds are coated. 4: Preheat oven to 400 F. 5: Cook down until shreds have released moisture and are tender. 6: Once cooked down, toss shreds in a bowl with BBQ sauce. 7: Add shreds back to cast iron pan or parchment lined baking sheet. 8: Bake in oven for 10-12 mins. 9: Meanwhile heat some oil and prep sweet potato fries. 10: Cut potato lengthwise into fry shape and then in half. 11: Fry sweet potato until golden. 12: Remove mushroom shreds from oven and toast bun/bread on the side. 13: Remove fries from oil. 14: Assemble and serve sandwich with mushroom shreds and pickle along with sweet potato fries on the side.View original recipe
