Instructions
1: For the roasted florets, place cauliflower florets on a baking tray, coat in oil and spices, and roast at 400ºF for 30-40 minutes. 2: For fried leaves, combine chickpea flour, salt, pepper, dried thyme, dried parsley, garlic powder, onion powder, and water in a bowl. Mix well. 3: Coat the leaves in the batter and fry until golden and crisp. 4: For the puree, boil the remaining cauliflower head until fork tender, then add it to a blender along with vegan butter or cream cheese, coconut milk, salt, and white pepper. 5: Blend until smooth, taste, and adjust seasoning as desired.
