Curry Roasted Carrots

A delicious dish featuring roasted carrots flavored with curry powder and complemented by a carrot top pesto and a creamy cannellini spread. This recipe provides a flavorful and healthy option for any meal.

What you need
cup oil

tsp dried basil

tsp salt

tbsp curry powder

tbsp nutritional yeast

clove garlic
tsp dried oregano

cup avocado oil

tbsp hemp seeds

tsp pepper

tbsp chili oil

tsp dried thyme

can cannellini beans
tbsp complete seasoning
Instructions
1: Set oven to 400°F. 2: Cut tops of carrots and set aside. 3: Transfer carrots to baking tray, coat in oil, salt, and pepper. 4: Roast for 10 minutes. 5: Meanwhile, make the curry glaze. 6: After 10 minutes, remove carrots from oven and brush the glaze on to fully coat. 7: Roast for another 10 minutes. 8: Make the carrot top pesto by combining all ingredients in a food processor. 9: For the cannellini spread, add all ingredients to a blender and blend until smooth. 10: Serve by layering the bean spread followed by the carrots and pesto to top. 11: Optionally garnish with toasted pine nuts and cracked pepper.
