Green Curry Tofu Skewers

Delicious vegan green curry tofu skewers made with a blend of fresh vegetables and spices. The tofu is coated and air-fried, then grilled to perfection, served over quinoa and fresh veggies.

What you need

cup chive

cup arugula

cup fresh basil

can coconut milk

tbsp curry powder

tsp salt & pepper
tsp ginger powder

tsp mustard powder

cup agave

tbsp vegan margarine
tbsp oil

cup chickpea flour

tbsp arrowroot starch
Instructions
1: Add all ingredients except for the agave and butter to a blender and blend until smooth. 2: Transfer to a saucepan and simmer for 15-20 minutes or until desired thickness is reached. 3: Finish with the butter and agave, then set aside. 4: Tear pumpkinseed tofu into large chunks, coat with oil, salt, pepper, and flour/starch. 5: Toss to fully coat the tofu, then air fry at 400ºF for 20 minutes. 6: Remove from air fryer and transfer to the curry, tossing to coat fully. 7: Skewer the tofu chunks and grill until charred all around. 8: Serve over quinoa and fresh veggies.View original recipe
