What you need

tsp salt

tsp pepper

tsp ground coriander

tsp dried thyme

cup fresh basil

tsp salt

tsp pepper

tbsp hemp seeds

cup olive oil

can chick peas

tsp smoked paprika

tsp onion powder

tbsp avocado oil
Instructions
1: Slice your zucchinis lengthwise into about 1/4 inch thick pieces. 2: Transfer to a bowl to season with ingredients listed above, toss to coat. 3: On medium-high heat, cook zucchini in a griddle pan or skillet for about 2-3 mins each side until a nice color develops and moisture has expelled. Set aside. 4: For the pesto spread, add all ingredients in a small food processor or blender and blend until combined (optionally mix 2 tbs of this with a 1/4 cup of plant-based mayo when serving). 5: For crispy chickpeas, drain and rinse one can of chickpeas, lay them out on a small baking tray and roast or air fry at 375ºF for 10-15 mins. 6: Slice bread of choice, assemble the sandwich, and enjoy.View original recipe
