This Hummus Pasta is packed with flavor and is easy to make. It combines pasta with a creamy hummus sauce made from chickpeas, tahini, and fresh ingredients, topped with sautéed onions, sun-dried tomatoes, and optional crushed pistachios.

What you need

fl oz lemon juice

tsp olive oil
tbsp pasta water

tbsp pistachio

tsp salt

clove garlic

tbsp tahini

cup ice water

can chickpea

cup baby spinach
Instructions
1: Boil pasta. 2: For hummus, add all hummus ingredients to a food processor and blend until smooth. Set aside. 3: Sauté onion and sun-dried tomatoes over medium heat until onions are translucent. 4: Add hummus and pasta water to emulsify the sauce. 5: Add in cooked pasta and fold in kale or spinach. 6: Optionally top with crushed pistachios, serve, and enjoy.View original recipe
