Jackfruit Cubano Sandwich

A delicious vegan take on the classic Cubano sandwich using jackfruit as the main ingredient, marinated with citrus, garlic, and spices, then toasted to perfection.

What you need

tbsp yellow mustard

tbsp cumin

cup olive oil

tbsp salt
tsp orange zest

clove garlic

cup lime juice

cup orange juice

tbsp ground coriander

tbsp pepper

tbsp oregano

tsp lime zest

oz vegan cheese

can jackfruit
Instructions
1: Preheat oven to 400°F. 2: Blend the citrus juice + zest, garlic, oil and spices until smooth. 3: Pour over drained and rinsed jackfruit and coat fully. 4: Cover and let marinate for at least 30 mins. 5: Once marinated, pan fry until slightly browned then pour over remaining marinade. 6: Roast in the oven at 400°F for 7-10 mins until charred and crispy. 7: Slice pickles, toast bread and add a layer of mustard jackfruit then vegan cheese. 8: Brush bread with melted vegan butter and press in a pan to toast fully on both sides. 9: Slice and enjoy.View original recipe
