What you need

can jackfruit

tsp salt

tsp pepper

tsp garlic

cup tomato paste

cup water

tsp chili powder

tsp salt

tsp cayenne

tsp ground coriander

tsp cumin

clove garlic

cup cashew

tbsp vegan margarine

tbsp turmeric
Instructions
1: Drain and squeeze liquid out of jackfruit between some paper towels (about 2 or 3 times). 2: Sauté jackfruit with peppers, onion, and seasonings. 3: Meanwhile, add tomato paste to a small pot along with water and spices. 4: Bring the mixture to high heat then let simmer for 10-15 minutes. 5: Once all prepped, put a layer of enchilada sauce in the bottom of your baking dish. 6: Fill tortillas with jackfruit mix, roll them up, and line them in the baking dish followed by another layer of sauce and 'cheese'. 7: Bake at 375°F for 25 minutes. 8: Let cool and enjoy!View original recipe
